Welcome to the Indriya Indulgence. At Indriya (formerly known as Colour Me Flavour), we believe that the very essence of the dishes on the menu, is basically not to bastardised deconstruction or Australianised Indian cuisine or even literally create a fusion.
All the dishes are created based on recipes passed down from thousands of generations and chef’s knowledge and perception of the colourful culture and beautiful spices of the Indian cuisine makes Indriya shine! We then translate this in a way that could be beyond normality and convention to create that space of what chef Eugene Lee says, “juxtaposed deliciousness.” The menu is about embracing tradition and then blurring the lines, breaking rules and expanding creativity – speaking many languages at the same time, not just limited to Indian, but also various cultures, science, history, humour and magic! It is about us expressing ourselves on a plate for you and that, in itself is the art of indulgence.
The origin of ingredients is paramount here at Indriya. Though most of the ingredients are locally produced, there are some ingredients that we have sourced from overseas because we believe that you deserve only the best ingredients that are prepared intricately so that you have an enjoyable dining experience. Our salad leaves and aromatique greens are from our farmer in Lamb’s Island. Seafood is transported fresh to us either air flown or from the Northern Territory. Our poultry and meat is from Victoria and our Spices are sourced from the region state of India, Navsari, Gujarat!
